ALL ABOUT ARTICHOKES
Along with white asparagus, artichokes are a springtime favourite amongst Italians. They originate from the Mediterranean region, were brought to Italy by the Arabs and were cultivated for the first time in Naples. Ninety per cent of the world's production still comes from the Mediterranean basin. Italy is the largest-producing nation, with Spain at second.
Artichokes represent a healthy food: they have very few calories and are rich in fibre, calcium, phosphorus, magnesium, iron and potassium. They also have a diuretic effect and are recommended to address high cholesterol, diabetes, high blood pressure, obesity and cellulite problems.
Artichokes have a wide range of uses in Italian cuisine, from appetisers and salads to pasta sauces and side dishes. Rome is the ideal place to experience the wonders of this vegetable. In the restaurants of the capital, artichokes are cooked alla Romana – classic Roman style – baked with lemon, mint and garlic. Or, alternatively, they can be cooked alla Giuda – flattened and fried – originating from the culinary influences of the Jewish quarter.
