My Favourite Homemade Banana Walnut Bread (GF) (V) (DF) (LS) (EF)

A delicious banana bread that's free from most of the common allergens and contains healthier sugars

This is one of my favourite sweets. It’s free from gluten, dairy, and eggs, and uses healthy sugars so you don’t get that horrible sugar rush causing many other problems.


  • 5 very ripe bananas 
  • Tsp cinnamon 
  • Tsp baking soda 
  • Tsp xantham gum 
  • 100 ml chia egg
  • 150 ml almond milk 
  • 2-3 cups mix of gluten-free flours (sorghum, brown rice, coconut)
  • Tsp vanilla extract 
  • Pinch of salt & nutmeg
  • Tbsp organic coconut sugar
  • Handful of crushed walnuts 
  • Coconut oil for brushing pan 
  • Tbsp vegan butter 


  • Handful desiccated coconut 
  • Tbsp maple syrup
  • Tsp vanilla 

(Mix all the toppings and refrigerate) 


  1. Heat the oven to 180° C.
  2. Mash up the bananas well.
  3. Add all the liquid ingredients and mix well.
  4. Melt the vegan butter for 30 seconds in the microwave before adding it to the rest of the mix.
  5. Slowly add in the dry ingredients and mix well.
  6. Brush your entire pan well with coconut oil and transfer the ingredients into the pan.
  7. Bake for 40-50 minutes.
  8. Once cooled spread your toppings on and enjoy!
