Chef Ali El Bourji of Atlantis The Palm in Dubai brings his vibrant Lebanese fare to the Clipper Lounge at the Mandarin Oriental from 27–30 September 2018. During his four-day residency, Chef El Bourji will spice up the dinner buffet and renowned Sunday brunch menus with the additions of authentic Middle Eastern dishes.
Famed for his impressive CV, Chef El Bourji has over 25 years’ experience in the culinary industry and has worked at a number of high-end hotel restaurants. Proving that his talents extend beyond backstage and into the kitchen, he has appeared on several foodie TV shows – including MasterChef Arabia and Kitchen Impossible – and will bring some of that creative flare to Hong Kong later this month.
With over 40 dishes to choose from, guests at Clipper Lounge can sample traditional favourites such as hot and cold meze, fattoush salad, cheese rekakat, seafood kibbeh and slow-roasted lamb shoulder. Covering a wide variety of tastes and dietary requirements, the buffet will showcase the aromatic flavours of the Middle East, with a live mixed grill station, a seafood selection and plentiful vegetarian options like tabbouleh, moussaka, potatoes harra and eggplant moutabal. Chef El Bourji will also present an array of authentic desserts – think sticky date pudding, halva cheesecake, Arabic coffee crème brûlée and more.

The dinner buffet is priced at $728 per adult and $438 per child and is available from 6:30–10pm (27–30 September). Sunday brunch is available from 12–3pm (30 September) and comes in at the same price, with an additional $300 free-flow option to include Veuve Clicquot Ponsardin Brut or Veuve Clicquot Ponsardin Brut Rosé, house wines and selected fruit juices.
