As with many other delicacies, white asparagus was born by mistake. Once upon a time, a farmer accidentally covered his asparagus with soil, preventing the sun from activating the chlorophyll process. At harvest time, the farmer hesitantly picked the sun-free asparagus, ate it and fell in love with the delicate flavour.
While green asparagus is available for longer, the white asparagus season is quite short, only from May to June. Due to the brevity of the season, its has a special place in the gastronomic calendar. During this period in northern Italy, there are many folk and country festivals celebrating this veggie.
But why travel to Italy, when white asparagus can come to you? Yes, white asparagus is available in Hong Kong. Even so, buying fresh Italian white asparagus can be pricey.
