The secret of Italian cuisine lies in the use of seasonal ingredients. Eating seasonally means eating produce at the height of its flavour. This concept applies particularly wonderfully during the summer months, when everything is fresh (no jarred-for-years or deep-freeze ingredients are typically used during the hot months).
