Tri-Colour Quinoa and Smoked Salmon Salad – an Omega-3 Super Booster

Serves: 2 portions

Prep Time: 25 mins


Ingredients:

  • 1 avocado, ripe
  • 1 big fillet smoked salmon (like 250-300 grams)
  • 1 handful of spinach leaves
  • ¾ cup raw tri-colour quinoa
  • 1 small onion
  • 10 cherry tomatoes
  • 1 boiled egg (if desired)

Dressing:

  • 3 tablespoons olive oil
  • Juice of ½ a lemon
  • 1 tablespoon vinegar
  • Salt & pepper
  • Fresh herbs (i.e. dill, parsley)

Method:

  1. Bring the water to a boil and cook the quinoa for 12 minutes. After 5 minutes, add one egg, which can boil with the quinoa. Take off the heat and drain well!
  2. In the meantime, prepare your dressing: mix all of the ingredients together and place the dressing in your salad bowl. Start chopping the onion, the tomatoes and roughly chop the salad leaves.  Stir everything together well. 
  3. Once cooled off, mix the quinoa with the salad or just sprinkle it on top. Last but not least, roughly chop the smoked salmon and place it on top of your salad.
