What does PDO stand for? Protected designation of origin. This appellation is one of the three existing in Europe whose goal is to promote and protect the cultural and gastronomic heritage of a European agri-business product.

The protected designation of origin is a guarantee of origin and specialty. It is also an insurance that the product was manufactured according to a know-how and clear specifications transferred from one generation to another.

For a cheese to be labeled with the protected designation of origin, it should:

  • Originate from a limited production area
  • Meet clear production terms and conditions
  • Have an established reputation
  • Undergo a PDO certification procedure recognised by the European Union
