The brocciu cake is a nice variation from the classic and famed cheesecake. This Corsican cheese cake is typically made with brocciu, a fresh goat's or sheep's milk cheese, however this rustic cake works just as well with ricotta.
The cheese used in this recipe is a brocciu fresh cheese.
- 8 eggs
- 1 1⁄3 cups sugar
- 2 lbs brocciu
- 2 tbsp lemon zest
- 1 tsp vanilla extract
- 1 tsp kosher salt
- Butter, for greasing pan
- Heat oven to 350°.
- Whisk eggs and sugar in a bowl until pale and lightly thickened. It usually takes about 2 minutes.
- Add the cheese, zest, vanilla, and salt; whisk until smooth.
- Pour into a greased 9″ x 13″ glass baking dish, and bake until barely set in the middle. It typically takes about 35 minutes.
- Transfer to broiler and broil on high until browned or for about 2 minutes. Let it cool before cutting into squares to serve.
