Too Much Cheesecake? Try Brocciu Cake

You all know about cheesecake, so here is a variation using Corsican cheese in a pleasant variation called a brocciu cake

The brocciu cake is a nice variation from the classic and famed cheesecake. This Corsican cheese cake is typically made with brocciu, a fresh goat's or sheep's milk cheese, however this rustic cake works just as well with ricotta.

The cheese used in this recipe is a brocciu fresh cheese.

  • 8 eggs
  • 1 1⁄3 cups sugar
  • 2 lbs brocciu
  • 2 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 tsp kosher salt
  • Butter, for greasing pan


  1. Heat oven to 350°.
  2. Whisk eggs and sugar in a bowl until pale and lightly thickened. It usually takes about 2 minutes.
  3. Add the cheese, zest, vanilla, and salt; whisk until smooth.
  4. Pour into a greased 9″ x 13″ glass baking dish, and bake until barely set in the middle. It typically takes about 35 minutes.
  5. Transfer to broiler and broil on high until browned or for about 2 minutes. Let it cool before cutting into squares to serve.
