Are you ready to get slurpy with 6 of the best noodles in town?

"Irasaimaseh!" This familiar greeting strikes upon the ears of every ramen lover. Here are some of the hottest picks (warning: may be synonymous with longest queues) of Hong Kong Foodies.

Tamashii 魂

Only offering four regular flavours with a featured one every season, Tamashi is a wildcard; it closes every Sunday(seriously, what a boss). Our favourite is its squid ink "black" ramen, although we can't wrap our heads around that piece of edible gold. Come early - it is more than ALWAYS you'll find Tamashii fully occupied, at any time of the day. The restaurant is a tiny compartment featuring seats for only fourteen lucky customers.

Santouka 山頭火

With branches all over the world, Santouka has expanded to be a global phenomenon. Also a favourite of Vancouverites, Santouka offers a Soy, Miso, Salt as well as Spicy broths, suitable for all kinds of taste buds. Pop in for an affordable lunch set, which consists of a fulfilling ramen and a sashimi rice bowl.

Yokozuma 橫綱Image title

A small flavorful shop, customers remain faithful to Yokozuma even if it is tucked behind the streets of Yau Ma Tei. The Tokyo vibe is excellent and you get to watch the dynamics of your superbowl in making. From the slicing of the meat to the noodle simmering; the process is captivating on its own, and you'll soon find that the product is well-worth the wait.

Ippudo 一風堂

Notable for its noodle variety, Ippudo features a thinner broth and five kinds of ramen that come with different textures. Imagine fettuccine, spaghetti and linguine....but in ramen. With over 20 flavours and more coming up, you'll find this chain restaurant everywhere, offering variety that no customer will get bored of.

Butao 豚王

Image title

Literally "Pork King" in Japanese, this winner of the field is followed by plenty of regulars. Sporting a perfectly cooked soft-boiled egg, the chefs of Butao master Ramenology best - putting together the richest broth, al dente noodles as well as that slice of pork belly with the perfect amount of melt-in-your-mouth fat.

Ichiran 一蘭拉麵專門店

Heard of 4am queues? Yes, this is the place that  defies that no-eating-after-9pm diet rule. This 24-hour ramen shop is the definition of guilty pleasure, and is frequented by party-goers at twilight. Offering solely one type of ramen, the chefs perfect your bowl to your order, no matter how picky you are. This includes the tenderness of your noodles, amount of garlic in the soup base, as well as the choice between pork belly and leaner meat.
