We are in the heart of white truffle season, and Italian-American osteria Posto Pubblico’s not one to miss out on the fun. Using their handmade pastas and affinity for seasonal ingredients to their advantage, the team at Posto have whipped up three new dishes to celebrate the short-lived, luxurious fungi, available until mid-December 2018.
We popped in for a quick taste and were smitten with the homemade tagliatelle ($229), deceivingly simple but bursting with flavour, served with a creamy butter sauce, Pecorino and white truffle shavings. The scallop crudo ($219), featuring fresh Hokkaido scallops, brown butter citronette dressing and a blanket of Alba white truffle, combined aromatic, earthy flavours with raw brininess. Another favourite was the grilled asparagus ($159) sourced from a local farm in Fanling, topped with a yolky poached duck’s egg, Parmesan fonduta and freshly shaved white truffle.
