This year, on Thursday, 14 February 2019, otherwise known as Valentine’s Day, take your sweetheart out for an evening that won’t be forgotten. Savour an intimate evening with a luxurious dinner, including unlimited champagne and a sabrage lesson, at GREEN.

Sabrage is the ancient art of opening a champagne bottle using a special sword technique that dates back to the French Revolution. Hotel ICON’s restaurant GREEN will be demonstrating the technique by restaurant manager Roni Tse together with G.H. Mumm Brand Ambassador Isabelle Piffard and will then invite couples to try their own hands at champagne sabring. Guided by Isabelle, each table will have the opportunity to try to remove the cork and top of the champagne bottle using the blade.

This visually stunning technique will add an exciting and interactive element to your evening celebrating the most romantic day of the year. Along with the demonstration and mini class, you’ll be dining on smoked duck breast and seared scallop with celery orange salad, followed by a main course of baked salmon en croute with champagne dill sauce or pepper-crusted fillet of beef with roasted sweet potatoes and balsamic onions. The final course is a stunning chocolate-coated ice cream served with crunchy granola and berries, along with free-flow G.H. Mumm Cordon Rouge Brut NV, red and white wine and juice, priced at $1,988 per couple (+10% service charge).

If you prefer to head up to see the skyline, Above & Beyond’s sweeping vistas will sweep you off your feet with their spectacular set dinner. Highlights of the six-course Valentine’s Day set dinner include pan-fried scallop with caviar, braised bird’s nest soup with conpoy and bean curd and fried rice with crabmeat and egg white in lotus leaf bamboo basket. Finish the evening of perfection with a champagne toast of G.H. Mumm Rosé Brut NV and a scrumptious vanilla chocolate rose with red berry compote for $1,288 per person (+10% service charge).
