Carbone is a New York-style Italian restaurant that pays homage to mid-20th century New York in the heart of Hong Kong.

Mario Carbone, Rich Torrisi, and Jeff Zalaznick of Major Food Group took the dining scene by storm when they opened Carbone last April in Greenwich Village, New York. In the restaurant’s first year they received numerous accolades – not least being a Michelin star rating and three stars from The New York Times. And it’s likely that their opening here will create the same amount of excitement.

The menu at Carbone will include hearty portions and bold flavours with familiar New York-Italian dishes such as baked clams, linguini vongole, lobster fra diavola, chicken scarpariello and veal parmesan.

In keeping with the original New York restaurant, the ambience at Carbone will incorporate plush leather banquets, antique brass chandeliers and sounds from the likes of Frank Sinatra, The Temptations and The Supremes, while contemporary elements such as an art collection curated by renowned art dealer Vito Schnabel and waiters in tuxedos designed by Zac Posen, will bridge the gap between the past and present.

The drinks menu will consist of an expansive wine list, featuring over 200 premium wines carefully selected to pair with the restaurant’s robust menu, reinventions of classic cocktails and a comprehensive list of spirits, liquors and aperitifs.
