Lemongrass Pork Ribs (1 rack)


-6 stalks of lemongrass

-4 shallots

-4 cloves of garlic

-1 Thai chili

-1/2 cup brown sugar

-1/2 cup fish sauce

-1/2 cup cider vinegar

Method


  • Blast all ingredients together in a blender, pour over the ribs
  • Wrap the marinading ribs in aluminum foil (better triple wrap it) and let it rest for 4 hours, or overnight, in the fridge
  • Bake at 180 degrees Celsius in the foil for 2 hours.
  • Remove the foil and place the ribs back in the oven for an additional 20-30 minutes, until the sugars caramelize
