GAME NIGHT FOODS: Crab Fritter Pancakes

He's helped our Foodie team cheer on our favourite sports teams this month in the best way we know how – through tantalising bite-sized game night foods. Have a go at making these simple but crowd-pleasing dishes at home but beware your guests might be keeping their eyes on the food rather than the game…

Crab Fritter Pancakes

Pancake Batter:

- 1 cup all-purpose flour

- 1 cup milk

- 2 tbls vinegar

- 4 tbls coriander, chopped

- 1 lime zest

- 1 tsp salt

- 1 tsp sugar

- 1 tsp baking powder

- 1/2 tsp baking soda

- 1 egg

1. Combine vinegar and milk and let it sit for 5 minutes

2. Add in egg. In a separate bowl, mix in the rest of the ingredients and add it to the milk and egg mixture. Mix until batter is smooth

3. Spoon about a tablespoon of pancake mix onto a hot grease pan, once one side starts to bubble, it's ready to be flipped

Crab Fritter (lump crab meat)

- 1lb crab meat

- 70g flour

- 150g cornstarch

- 4g baking soda

- 1 cup water

1. Mix all the ingredients together except crab

2. Dip chunks of crab meat in mixture then drop in a pan of frying oil

3. Top pancakes with crab fritters
