Pure Berlin, a progressive food consultancy company (from Berlin would you believe), is anchoring at The Ocean in Repulse Bay for three nights, beginning Thursday 21st. Executive Chef Agustin Balbi teams up with chef Miles Watson and the Pure Berlin team to create an 8-course degustation dinner, blending cuisines to expand the minds and palates of Hong Kong diners.

Chef Balbi's intent is for similar partnerships such as this “Four Hands” event to reoccur throughout the year, working with visiting culinary stars to showcase the talents of the next generation of great international chefs.

Chef Miles Watson and the Pure Berlin team have previously paired with notable chefs such as Dominique Crenn of Atelier Crenn in San Francisco and closer to home, Janice Wong’s 2am:dessertbar in Singapore.

The Ocean is known for serving a sea-inspired tasting menu, sustainably sourcing their produce and crafting beautiful dishes with inspiration, modern sensibilities and above all, respect for ingredients and the amplification of natural flavour.

What's on the menu? Four courses from each chef; beginning with an amuse bouche titled Uni, Bread and Truffle.
To follow are four diverse dishes: a spice-laden XO Shrimp with Black Garlic, a subtly refreshing Tuna with Green Apple, Shiso Flowers and Dill, a flavourful Soft Shell Crab accented with Coconut, Chili, Caramel and Citrus, and a bold and earthy Smoked Red Snapper with Chanterelle mushrooms.
The Mahi Mahi with Five Spice, Sepia and Peanuts is served before Chef Balbi’s beloved Lobster Confit with Tortellini and Maitake in a rich, delectable bisque, concluding the savory courses in satisfaction.
For dessert, a grand and fun-to-eat “Rice Pudding Beach,” followed by Goat Cheese Foam with Bread Ice Cream, Spice Wine Gel and Caramelised Walnut.
To round things off, Fortune Cookies and Black Sesame Macaroons are the call to raise anchor and set sail for home.

The Ocean in Repulse Bay

Stepping into The Ocean feels like entering the Little Mermaid’s underwater kingdom; that is, if it was outfitted entirely in Hermes. The newest edition to Le Comptoir’s portfolio of beautiful restaurants, The Ocean is a visually stunning spot to eat in, and the dishes are on par with the surrounds. A pop up here will only elevate an already exciting dining experience. 

Price: 8-course degustation experience, with paired beverages (at an additional cost) $1088 per person.
