GENNARO’S PASTA ARRABIATA

Serves: 1 person

Prep time: 5 mins

Cooking time: 10 mins


Ingredients:

5-6 sundried tomatoes

1-2 tsp dried chilli flakes (depending on how hot you like it)

1 small bunch fresh parsley, finely chopped

1-2 tsp dried oregano

80g spaghetti

1-2 tsp grated Parmesan cheese

Extra virgin olive oil


Method:

Add sundried tomatoes, chilli flakes, parsley, oregano, and 3 tablespoons olive oil to a food processor. Blend until smooth. Season lightly.

Bring a pot of salted water to a boil and cook pasta as per package instructions. Reserve 1/4 cup of the pasta water after cooked.  

In a large mixing bowl, add the cooked pasta, pasta water, parsley and the arrabiata mix.  Drizzle more oil if the pasta is too dry and sprinkle some grated Parmesan before serving.
