Heading the pop-up are four chefs from very diverse backgrounds. At the helm is Victoria Eliasdóttir, an Icelandic-raised and trained chef who's spent time working alongside famed chef Alice Waters. Sous chefs include Filip Soendergaard from Denmark, Andrea Iannicella from Italy and Julia Heifer from Germany, working together to deliver a meticulous yet completely unfussy experience. The cooking will be Scandanavian-based, generously-portioned, and undefined - an ethos that Dóttir has abided by since it began and what has earned the restaurant a loyal following and rave reviews despite having been open for less than 18 months.
The menu features seven courses with drink pairings. Highlights include the slow-cooked fish with smoked buttermilk, a chive vinaigrette, pea pureé and fish skin, as well as one of Dóttirʼs signature dishes that features carrots cooked for hours under a seaweed vinaigrette with brown butter and reduced carrot juice as well as a confit chicken thigh cooked in duck fat with tarragon oil and leaves, pickled cherries, crispy chicken skin and celeriac purée while the dessert department will serve a white chocolate mousse, cassis granita, fresh blueberries in thyme syrup alongside a baked white chocolate and salted almond crumble.
