Okay, we don’t automatically associate Mexican food and drink with Paris, but Candelaria is an exception. Open since 2011, this cosy and atmospheric taco bar and watering hole has maintained a placed on the World’s 50 Best Bars list for the past five years. Specialising in agave-based cocktails, Candelaria’s hidden back room is where the mixology magic happens.
From 16–20 November (6pm till late) at The Ritz-Carlton’s bar-with-a-view Ozone, guests will have the opportunity to sample six of Candelaria bar manager Ivan Avellaneda’s signature experimental cocktails ($160 each), along with a selection of tacos, tostadas, guacamole, salsa and chocolate dessert recreated by Ozone Chef de Cuisine Rafael Gil using original recipes from the Parisian hotspot. Unmissable tipples include the potent La Guêpe Verte, crafted with spice-infused tequila blanco, cucumber, coriander, lime and agave syrup, and the Amor & Deudas, a ladylike concoction made with tequila blanco, Aperol, crème de menthe, lemon, pineapple, jalapeño syrup and coconut sugar.
The most anticipated element of the pop-up may not even be the fiery Mexican fare, though. It’s the pop-up’s entrance that we’re looking forward to entering – accessed through the hotel lobby via a secret doorway that’s never before been open to the public. Ozone is really on a roll of late, with this Candelaria set-up hot on the heels of last month's incredibly popular Duck & Waffle pop-up.
