Taking the global crown is Eleven Madison Park in New York, the first American restaurant to snatch the top spot since 2004, edging up from third place last year. Swiss Chef Daniel Humm helms the kitchen, serving an eight- to 10-course seasonal tasting menu that's described as “modern French with a New York twist”. The restaurant's signature dish is its lavender-and-honey duck. Completing the top 3 are Osteria Francescana in Modena, Italy, consistently ranked in the top 5 since 2010, and El Celler de Can Roca in Girona, Spain, run by three brothers who serve up traditional Catalan cuisine with a creative twist.

Seven restaurants in Asia made it onto the list, with Gaggan in Bangkok soaring 16 places to claim the number 7 position and the top restaurant in Asia title. Singapore’s Restaurant André climbed a whopping 18 places to secure the number 14 spot. Hong Kong is done proud by Amber, making the list for seven years in a row. The French restaurant slid slightly from its 20th-place position last year to land at number 24 this year. 8½ Otto e Mezzo Bombana was placed at number 60, followed closely by Lung King Heen at 70.

The list is a global poll of more than 1,000 food experts from 26 regions around the world, with each region comprising 40 members. Each regional member must cast votes for 10 restaurants and at least four of them must be from a region outside their own. They must also have visited the restaurants in the past 18 months.
