One of the most renowned bartenders in the world has previewed his brand-new bar, set to open next year in New York, by transforming Hong Kong’s Quinary for three nights this October.
Angus Winchester is a multi-award-winning bartender with nearly 30 years of experience that have culminated in the unveiling of his soon-to-open Brooklyn drinking den, The Embassy, located in the basement of a former brewery complete with underground brick vaults that will be revamped into a comfortable haven for both modern and classic cocktails with an emphasis on service. It will also house The Residence, a more intimate, invite-only space for tasting rare drinks from far-off places.
In the run-up to the opening, Angus travelled to Hong Kong for a collaboration with his old friend Antonio Lai of Quinary and World Class, the luxury collection of spirits, to preview the essence of his new venture. We spent an evening sampling the cocktails from the HK version of The Residence along with beautiful bar snacks from the team at Quinary. These included juniper-spiked gin and tonic popcorn and baskets of deliciously crispy whitebait.
A passport was supplied with the drinks, with recipes included inside and the opportunity to indulge in a ”break even“ bottle where they share a chosen bottle with a measure per person at cost price to expand the palate and extend the love. The tasting included six of the best cocktails collected during Angus’ travels around the globe – we loved the Caesar, Oyster and Green Basil Smash – each accompanied by tales from the eloquent and knowledgeable bartender himself.

There is an element of kitsch and whimsy to both The Embassy and The Residence; the drinks are an outstanding display of well-honed cocktails and the chatter is engaging and insightful. It gives a new edge to drinking where the emphasis is on sharing, sampling and regaling. We only wish this pop-up were a permanent addition to Hong Kong’s bar scene.
