IPPUDO, established in Japan by internationally renowned ramen king Shigemi Kawahara, has ranked among the top 10 ramen restaurants for five consecutive years (2012–2017) by Tokyo Ramen of the Year (TRY), the annual ranking of ramen shops. Growing its local and global presence since 1985, the branch launched its flagship shop in Hong Kong in 2011.
Adhering to its founding principle of balancing continuous innovation and authentic flavours, IPPUDO participated in the latest Tokyo Ramen Show (yes, this actually exists!) with a fusion creation: Hakata Tan-Tan Men. This stinging and numbing spicy ramen was a tried-and-tested Tokyo crowd-pleaser, and it’s now available to please the Hong Kong masses.
The Hakata Tan-Tan Men ($78), originating from Sichuan, is prepared using a special chilli oil. The red oil is made by immersing many different chilli peppers and peppercorns in oil over a long period of time. Its intense flavours are balanced by an unlikely element: shredded cheese. Upon spooning the spicy soup into your mouth, expect to taste both the kick from the chilli oil and the creaminess of the broth as the cheese melts.
Alongside the celebrated ramen, IPPUDO HK also bring along the award-winning Japanese karaage boneless chicken thigh produced by Taiko ($45). A famous restaurant in Oita, Japan, Taiko is said to be the originator of karaage (Japanese fried chicken).
