You’ve probably heard that, sadly for us cocoa fiends, some chocolate bars are made out of everything BUT chocolate. Well, we have some good news for you: La Maison du Chocolat’s newest collection – Bien Être, which translates to “wellness” in English – is made with the completely opposite mindset, banning all animal fats, proteins and artificial sugar. In its place are fruit purées, juices and nectars.
The master chef of La Maison du Chocolat, Nicolas Loiseau, came up with the idea for this 100%-natural chocolate after being inspired by Dr Thierry Hanh, a nutritionist who works with chefs and corporations to create healthier menus. Hanh’s research includes finding a nutritional approach to pastry making without impacting the taste and texture of the baked goods.
Cloiseau said he isn’t interested in “easy clichés, chocolate lite or unsweetened chocolate” for this new collection, instead using honey as a sweetener, hazelnut oil for creaminess and chicory for fibre.
The Bien Être collection is made dense with ingredients with high nutritional values and antioxidants such as mango, turmeric, aloe vera and squash seeds. The chocolate is made with a minimum of 45% fruit, up to a maximum of 74%.
The “Bien Être” Collection will be available at La Maison du Chocolate boutiques in Hong Kong and online from 1 June 2018.
