The Walrus 創意品蠔新體驗

香港人對生蠔向來都趨之若鶩,除了鮮味可口,其豐富的維他命、礦物質和蛋白質對人體非常有益。而每當那細膩柔和的肉身和鮮甜海水味在口腔中溜過,身體都恍如接受了一次大自然的恩賜──更何況,來到生蠔吧,當然不會只感受一次恩典吧?Image title

大多數人品嚐生蠔,都只會加些許檸檬汁,直接取其鮮味;之不過,有時來一些加添新意的食法,會更合香港人怕悶的脾胃,而The Walrus亦因而隆重登場。

店舖名字「The Walrus」解作海象,看似和蠔毫無關係,但由來其實是引經據典:在《愛麗斯夢遊仙境》的詩篇〈海象與木匠〉中,正是海象誘使生蠔爬上岸,再使其成為盤中食物。

這裡的菜式為蠔吧帶來新的詮釋,不但具備世界各地的各種生蠔,更有二十多款食法任君選擇,配料的重點是新鮮度、季節性、創新性,還有食品和飲料的合襯度,務求在味覺和視覺上都要帶有品味。

下圖精美的Oompa Loompa便是一例,在原隻生蠔上加上自家製的血橙雪芭、三文魚青瓜他他;而Hail Caesar則用上特別配製的凱撒沙律醬。Image title

縱然生蠔和蔬菜兩者來自不同世界,看似少有往來,但The Walrus也為迎合素食者而創設出特有的食法,這款「素生蠔」就是用奇妙地帶有生蠔味的生蠔葉 (oysters leaf)所造成;此外,這裡甚至有「甜生蠔」──先以朱古力製成蠔殼,配以海鹽雪糕,對不同口味喜好都照顧周到。

The Walrus明白正如香車配美人,美食亦要有優質飲料去相配,而這裡的獨家飲品是由同一老闆打理的雞尾酒吧The Woods提供,更專為這裡的食品調配。當中如Rhubarbarella就是以酒醋配士多啤梨及大黃糖漿;Tom Yum Me則為具東南亞色彩的雞尾酒;而MLB的成份有烤花生及香蕉釀製的波本威士忌,再加自家製可樂。Image title

位於蘇豪區士丹頓街,The Walrus的耀眼點是把具海外元素的設計,及時尚的陳設隔合於袖珍的空間中,是餐前或餐後來個便餐或淺酌一杯的好地方。
