Brickhouse is hosting a pre-summer fiesta with its new menu created by newly appointed Executive Chef Justin Haelfer.
Renowned for its authentic Mexican produce, homemade soft tacos, plentiful vegetarian dishes and much more, this multi-awarded Mexican eatery is excited to have Chef Justin on board to spice things up even more.
Chef Justin joins Brickhouse from Rick Bayless’ restaurants in California, having worked closely for three years with the man himself, who is often referred to as one of the greatest Mexican chefs in the US.
With his wealth of knowledge and experience, Chef Justin does not take inspiration from cookbooks but soaks in everything surrounding him. He believes in enriching his knowledge from multicultural backgrounds and can find inspiration from the smallest of things – for him, it's all about sharing knowledge and exchanging ideas.
Overseen by Culinary Director Malcolm Wood, Executive Chef Justin and Head Chef Eric have worked together to create an explosive new menu that showcases their passion for authentic Mexican cuisine. Ingredient-focused dishes have been introduced, including the Prawn Star 2.0: a combination of two chilli-flake-spiced shrimp, lime-garlic cabbage, mango salsa, coriander and onion.
Then there's mole pollo, a traditional dish comprised of achiote-marinated chicken in a mole sauce with toasted sesame seeds and grilled spring onion.
Earlier this year, Chef Justin already made waves by giving patrons a glimpse of what’s to come from the new menu by introducing the molcajete nachos, which have now become one of the most Instagrammable dishes to date at Brickhouse. Created with layers of textures and tastes, from only the freshest ingredients – right down to the house-made corn chips – this multi-sensory experience is built carefully to ensure there is a new surprise with every mouthful. Every last detail has been carefully thought out, even the traditional grey mortar in which it is served – originally used in Mexico for grinding chilli and spices into a paste.
Our mixologists work in unison with Justin and Eric to create cocktails showcasing authentic Mexican flavours to best complement the dishes from the new menu. The innovative cocktails play with some of the best ingredients in Mexico, including jalapeño, watermelon, lime and even cigar smoke, which exudes that authentic Mexican experience. Expect the unexpected with their take on experimental, unusual and flavoursome cocktails developed to complement the delicate flavours of Brickhouse's food – and to give your night that extra tequila kick!
