Recipe Video: Arroz Cubano

Rhoda from @platesandbubbles recently made a delicious arroz Cubano, or arroz a la Cubana, for breakfast last weekend. Spanish-speaking countries tend to have their own variations of this rice and fried egg dish. In the Philippines, it’s cooked with minced beef. Serves: 2–3

Prep time: 10–15 min

Cooking time: 20–25 min

Ingredients:

  • 300g organic beef rump mince
  • 2 cups cooked rice
  • 2 shallots, chopped roughly
  • 2 cloves garlic, minced
  • 1 cup diced potato
  • 1 cup diced carrot
  • ½ cup frozen peas
  • 250g chopped tomatoes
  • 1 tbsp tomato paste
  • ¼ cup dried cranberries
  • 1–2 plantains
  • 1 egg per person
  • salt, to taste
  • pepper, taste
  • olive oil
  • cayenne pepper (optional)

Method:

  1. On medium heat, sauté the shallots, garlic, potato, carrots and peas until they soften. Season with salt to taste.
  2. Add the minced beef and cook until the meat browns.
  3. Add the chopped tomatoes, tomato paste, cranberries, salt, pepper and cayenne, if using, and cook until the tomato sauce is absorbed by the beef. Set aside.
  4. In a separate pan, slice the plantains and fry on both sides. Set aside, then fry the eggs, sunny side up.
  5. Assemble all elements with the steamed rice.
