Soba Salad and Poached Eggs with Furikake and Ginger Miso Vinaigrette

A delicious Japanese soba salad that's vegetarian and healthy

Serves: 2 persons

Preparation time: 5 minutes

Cooking time: less than 10 minutes


Ingredients

  • 2 free-range eggs, poached
  • 1 capsicum, thinly chopped
  • 1 carrot, thinly sliced
  • 1 cucumber, cut into bite-sized portions
  • 1 handful of chopped spring onions
  • 150-200 g cooked soba, rinsed with cold water and drained 
  • 2-3 tbsp furikake 


Miso vinaigrette:

  • 4-5 tbsp white miso 
  • 2 tbsp rice vinegar
  • 1 tsp honey
  • 1 tsp soy sauce
  • 1 thumb-sized ginger, grated 
  • 1 garlic clove, finely chopped
  • 1/3 cup of water for diluting the dressing


Instructions

  1. Mix all ingredients and season with furikake and chopped spring onions.
