Grilled Eggplant & Shiitake with Cabbage Soba Salad

This grilled eggplant and shiitake soba salad is a fusion of everything good in the world

Ingredients

  • 1/2 small eggplant, thinly cut into 1 inch thick slices
  • 3 small shiitake, thinly shredded
  • 1/4 small cabbage, thinly shredded
  • 1 small garlic clove, finely chopped
  • 1 handful of chopped spring onions
  • 80 - 100g cooked soba, rinsed with cold water and drained 
  • 2 tbsp furikake 
  • sesame oil / extra-virgin olive oil


Miso vinaigrette:

  • 2 tbsp white miso 
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 tsp soy sauce
  • 1/2 thumb-sized ginger, grated 
  • 1/2 small garlic clove, finely chopped
  • 1/3 cup of water for diluting the dressing

Instructions

  1. Start grilling the vegetables on a griddle pan; this should take about 3 - 4 minutes on each side. The vegetables should be cooked within about 10 minutes.
  2. Mix all ingredients and season with furikake and chopped spring onions.
