As many of you may understand, breakfast just isn’t something that you have time for during the working week anymore… the older you get, the less time you have to enjoy a nice, slow, deliciously hot, yummy, and nutritious breakfast. Being able to sit down, read the paper, and relax as you enjoy your first meal of the day is basically a privilege, and we, here at Foodie understand that pain… which is why we’ve devised a list of 7 microwavable mug breakfast foods that are not only quick and easy to make, but efficient to eat on the go, too!


1) Mug Quiche:

Ingredients:

1: egg

1 ½ tbsp: milk

Pinch of salt & ground pepper

¼ cup: torn bagel / harder breads

2 tsp: cream cheese

½ slice prosciutto / ham

Sprinkle of fresh thyme leaves / chopped chives

Microwave: 1 minute & 10 seconds (on high)

Ingredients:

1 large egg

1 ½ tbsp.: whole milk

1 tsp: melted unsalted butter

Pinch of salt and pepper

4 small grape tomatoes (halved)

1/8 cup: torn bread

1 tbsp: grated cheese of choice

1 tsp: chopped fresh herbs / garnish

Microwave: 1 minute



2) Mug Blueberry Flax Muffin:

Ingredients:

1oz: frozen blueberries

¼ cup: ground flaxseed

½ tsp: baking powder

2 tbsp: pancake syrup/honey/maple syrup

½ tsp: orange zest

1 egg white

½ tsp nutmeg

Microwave: 1 minute


3) Mug French Toast:

Ingredients:

1 tbsp: butter

¼ cup: milk

1 egg (beaten)

¼ tsp: ground cinnamon

¼ tsp: white sugar / caster sugar / granulated sugar

¼ tsp: vanilla extract

2 slices of bread of choice, cut into cubes

Microwave: 1 minute 10 seconds


4) Mug “baked” Apple Banana Oatmeal:

Ingredients:

½ cup: quick cooking oats

1 tbsp: ground flax seed

1 egg

½ cup: milk

1/3 of a banana, mashed

¼ tsp: ground cinnamon

½ of an apple, chopped

2 tsp: honey

Microwave: 2 - 3 minutes (on high)

Ingredients:

3 tbs: all purpose flour

1 tbsp + 1 tsp: caster sugar / granulated sugar / white sugar

2 tbsp: brown sugar

1/8 tsp: salt

1/8 tsp: baking soda

1/8 tsp: baking powder

1 egg

¼ tsp: vanilla extract

1 tbsp: vegetable oil

1 tbsp: milk

1 riped banana, mashed

Microwave for up to 3 minutes, but stop to check after 90 seconds for doneness

¼ cup: oat bran

2 tbsp: buckwheat groats

1 tbsp: ground flaxseed

½ tsp: baking powder

pinch of salt

¼ tsp: ground cinnamon

½ tsp: vanilla extract

2 tbsp: unsweetened applesauce

¼ cup: almond milk

½ cup: fresh, diced strawberries

Microwave: 1 minute & 30 seconds


7) Mug Cinnamon Maple Breakfast Quinoa:

maple syrup, to taste
