Summer Series: 8 “Voodles” Recipes You Need to Make Right Now

Here’s a little pop question to get all your Foodie brains going: what would you get if you use a julienne peeler/veg peeler on a (root) vegetable?

Times up! If you haven’t already guessed it, here’s the answer: Voodles! Yup, voodles… Or noodle vegetables, an innovatively new food trend that offers a much healthier paleo alternative to the traditional hearty pasta or noodle dish that we all know and love.

As summer is fast approaching, the “voodle” is the perfect way to get your pasta/noodle fix without sacrificing your calorie count, and is generally a lot better for you. Plus, it’s a fun way to mix things up and eat more vegetables because let’s face it, if your food is both fun to make and fun to eat, who wouldn’t want to try it?

The procedure and general preparation of the “voodle” is quite straightforward: With a root vegetable of your choice (carrots, cucumber, courgette, aubergine, pepper etc.) simply glide your peeler vertically downwards to create thin shavings or “noodles”. This can also be done using a spiraliser tool if you have one, but since most people don’t, the peeler works just as well. With that, all there’s left to do is to make the sauce!
