I was kindly invited to take a sneak peak of The Ocean, a new sustainable seafood restaurant at The Pulse in Repulse Bay, mid last week.
As we first entered we were warmly greeted by the staff and taken to our seats, which faced out towards a sea view (although it was dark so there wasn't much to see out there). As we were introduced to The Ocean and their ethos of sustainability, we were personally thrilled to hear about the extents they have gone to to be environmentally sound; even their water has its own personal filtration system (carbonated water included).

Let's start with the beautiful food!
We will leave out the name of the dishes, so as to not ruin all the surprises if you are anticipating a visit (which I'm positive would be enjoyable).
Snacks: Potato Nest paired with caviar, pumpkin and walnut cake and cherry tomatoes with cream cheese
A bit of molecular gastronomy: creme fraiche, caviar and balsamic vinegar, over dried puréed monkfish
Hokkaido scallop with miso sweet corn pureé
Daily fresh baked bread with extra virgin olive oil (all made in house)
Tiger prawn with 5 Italian tomatoes and wild berries
Carrots in chimichurri sauce with 12 hour slow cooked octopus (super tender and sweet)
Matsutake mushrooms tortellini with lobster served with lobster bisque
And THEN we were spoiled with two different desserts:
Madeleines, sponge cakes with biscuit paired with mascarpone and orange sorbet.
Dark chocolate with a surprise of popping candy and chocolate mousse paired with pickled cherries
Lastly, black sesame macarons and blueberry tarts
