The city’s beloved weekend tradition gets an innovative spin as multi-award winning chef Josh Niland introduces the FYSH Roast experience at his signature restaurant FYSH at EDITION. Available exclusively for Sunday lunch, it’s a communal-style feast celebrating the finest catch from the ocean along with succulent roasts and vibrant accompaniments.

“I wanted to add a little bit of a family tradition from back home with my favorite weekend affair,” explains Niland, whose boundary-pushing Sydney restaurants have transformed perceptions around cooking and aging fish.

More than just a seafood restaurant, FYSH reimagines the classic steakhouse through Niland’s pioneering culinary lens. His new Sunday menu is designed for shared indulgence, connections, and culinary exploration among loved ones.

The FYSH Roast kicks off with an array of starters paying homage to Niland’s innovative fish-focused cuisine. Highlights include Swordfish Empanadas with Roast Garlic Yoghurt, Charcoal Grilled Slipper Lobster with Vadouvan and Lime, and the can’t-miss FYSH Egg Tart topped with trout roe, soft eggs, and nutmeg.

For the main course, diners can opt for individual portions or feast on sharing platters. The beautifully charred Butterflied Aquna Murray Cod served with barbecued greens is perfect for two to four people. Alternatively, larger groups can indulge in a Selection of Dry-Aged Mooloolaba Yellowfin Tuna accompanied by a generous spread including ribeye steak, merguez sausage, and glazed skirt steak.

Vegetarians are treated to the sublime Flowering Zucchini & Pecorino Pie with grilled peppers, saffron and basil. But the true star is the FYSH Trolley, which gets rolled out tableside displaying the day’s freshest catches and cuts for diners to choose from. It makes another appearance at the end with an eye-catching dessert selection.

The sweets showcase Niland’s innovative flair, from the Tarte Tropézienne to the Chocolate & Murray Cod Fat Caramel Tart and a Trifle of Red Fruits with rose cream, rosé jelly and coconut. It’s an indulgent finale to this decadent Sunday tradition reinterpreted through FYSH’s distinct seafood-centric lens.
