Between the breath-taking view, spectacular water fountain and luxurious chandeliers, there are few things better than lunch at Tosca. It’s not the opera, but a note-worthy Michelin starred Italian restaurant in The Ritz Carlton 5-star hotel. The setting is dramatic and comforting with a busy open kitchen and evenly spaced velvet seating. Upon seating, the staff serves a bread basket filled with a range of rolls including crispy parmesan cheese flatbread, black olive brioche, herb buns and sourdough toast. To begin, the sea tiramisu with red prawn carpaccio and seafood foam will easily satisfy any seafood lover, whereas the langoustine is paired with fresh salad leaves and creamy crab mayo, plated wonderfully like a piece of art.
The spaghetti “alla chitarra” is so lovely-looking, wrapped with swordfish, topped with baby squid and a drizzle of black olive oil. The langoustine tortellini, on the other hand, is a delicately made single piece of heaven topped with a flavourful bisque-like sauce.
While the first two courses are almost too beautiful to dig into, the following fatty roasted pork belly and a Milanese nera coated turbo are lacking a tad of that wow-factor, yet both are made flaky and tender.
Before reaching the end of the 4-course meal, make sure you plan to save room for dessert. My favourite are the textures of chocolate by Tosca with passion fruit, creamy mousse, mini lava cake, sorbet and a lemon curd-gold flake combo slice, all teaming up to form this intense chocolate opera. The aesthetically pleasing plating of the deconstructed cheesecake is interesting with cherry tomato jelly, sweet rhubarb and bay leaf ice cream. Finally, this sophisticated lunch ends with a selection of petit fours, including chocolate squares and icing-coated tangerine cakes from the chef.
