CE LA VI, is a living, is a pursuit of pleasure. This is a flagship opening for them in Hong Kong, located on the top floor of the restyled California Tower. The view of the iconic skyline over legendary Lan Kwai Fong is absolutely spectacular.

They offer pastry workshops that are hosted by CE LA VI executive pastry chef Jason Licker, who has worked in some of the more globally familiar top kitchens including the JW Marriott Hong Kong and three Michelin-starred Jean Georges in New York. I was fortunate enough to be invited to one.
Chef Licker’s masterpieces are truly stunning and quite unpredictable and even include a Hong Kong cappuccino. It's a twist on an ordinary cappuccino drink, made with layers of passionfruit cream, milk tea gelato, whisky foam and finished with a milk powder crumble.

A gorgeously presented white chocolate is infused with Junmai sake, berries with yuzu syrup and salted toffee that offers the perfect crispy sensation.

The piece of toasted almond cake is impressively served alongside a refreshing guava sorbet, some calamansi curd, paper thin coconut and orange crisps and sprinkles of dehydrated yoghurt, which have been expertly glazed with citrus juice.
