First opened in 2005, Noodle TETSU has now expanded to over 16 branches around Japan. They have been modifying their soup and ramen continually and have built a loyal following and yielded high satisfaction in return. And today, finally, they launch in Hong Kong! Situated on Canal Road West in Causeway Bay, the restaurant has a ramen bar as well as the option to dine in on tables.
More than just regular ramen, the menu offers guests the best tasting tsukemen, a cold dipping noodle dish with Japanese ramen, served with a bowl of thick soup separately. Optionally, a hot version is also available with the noodles served in a hot, clear broth.
The Sendagi ramen availability is limited to 30 bowls per day. With a fragrant fish broth made with large amounts of sardines and dried mackerel, it comes with ramen of medium thickness, thin cut char siu and bamboo shoots.
For a richer experience, the tsukemen has a thicker pork bone broth with fatter cuts of pork. It is satisfyingly dense owed to the 36 hour simmering process which incorporates chicken bones, dried sardines and mackerel fish. Served hot, I really enjoyed the thick cut ramen which is chewy in texture and works very well with the broth.

The hot stone is fun to play with and also instantly reheats the broth.
In addition, their homemade soft boiled egg is unbeatable. Accompanied by a moderate price tag, Tsukemen TETSU is a nice addition to the Hong Kong ramen market.
