Review: Seasons by Olivier E. – Autumn Night Forest Tasting Menu

Seasons brings diners a taste of autumn featuring seasonal specialities

Seasons by Olivier E. has just launched its new Autumn Night Forest tasting menu, available until 30 November. The menu is comprised of four or six courses ($888 and $1,888 per person) that are so brilliantly themed to the season of autumn, both in presentation and ingredients, that you'll feel as if you're residing in a city that actually experiences a proper autumnal season.

We loved the cep consommé, which was beautifully presented with an array of smoked herbs underneath the bowl. In keeping with the autumn theme, the bowl was placed inside a hollowed-out tree trunk with pine cones and other fall greenery scattered around the plate. In terms of ingredients, the wild mushrooms had a strong flavour that was heightened when the vegetarian consommé was poured on top.

We were absolutely captivated by the unusual presentation of the autumn truffle and Dover sole en papillotte with nori and shimeji mushroom. The ingredients were all cooked together in a plastic bag and then placed on a plate of pebbles, meant to represent a shoreline. The top of the bag was cut open, releasing a medley of enticing aromas. The fish was incredibly tender and soaked up the flavours and scents of the truffle, seaweed and mushroom.

After indulging in both vegetarian and seafood dishes, we were looking forward to the charcoal-grilled duck breast with sautéed girolles and mirabelle plum. The duck was glazed with honey, pink peppercorn and chive before being grilled over a charcoal fire, giving it a sweet yet spicy taste. The ingredients, while seemingly at odds, paired perfectly together, and we practically licked the plate clean.

We could not wait to sink our teeth into dessert: forest entremet and green tea crumble with cherries and red wine sorbet. The detail and thought put into this pudding was commendable; the chocolate entremet was served on a bed of 'mossy' matcha crumble with 'stones' made of chocolate brownie and popcorn. Cherries and red wine sorbet finished off this culinary masterpiece. The intricate combination of flavour and texture made this a flawless finish to a fantastic meal.


The Autumn Night Forest tasting menu is available until 30 November and is priced at $888 per person for four courses and $1,888 for six courses.
