The first in a series of guest-chef dinners hosted with Swire Properties, r é n is joining Té Bo and Aqua for a four-hands dinner on Aug. 12 at Té Bo to raise funds for the social enterprise’s youth programmes.

The focus is Italian summer, featuring an eight-course menu (HKD1,288 pp) designed jointly by Aqua chef Romeo Morelli and Té Bo chef Sebastian Lorenzi, the Foodie Forks 2025 Rising Star Award winner. Supporting the team is r é n beneficiary Ah Hei, who has worked with SOUTH LANE at Two Taikoo Place for a year running.

The tasting menu captures flavours central to both restaurants’ philosophies, including the hamachi tartare with caviar, yoghurt sauce, and parsley oil, handmade potato gnocchi with Sicilian red prawn, pan-fried sea bass and coco de paimpol, and red-wine-braised short rib with seasonal sauces.

Proceeds of this dinner and future evenings in the series will be made by Té Bo to the r é n Community Foundation, which supports beneficiaries like Ah Hei entering the F&B industry.
