This lemon-garlic-butter chicken dish is sure to become one of your favourite meals. It’s easy to make, hearty, flavourful and cooked in just one pan. It’s a total winner winner chicken dinner!

  • 4 boneless, skin-on chicken thighs
  • ½ tsp salt

For the sauce:

  • 3 cloves garlic, sliced thinly
  • ⅔ cup chicken broth
  • ¼ tsp black pepper
  • juice from ½ lemon + lemon wedges for serving
  • 2 stalks spring onion, chopped into 1-inch lengths
  • 1 tbsp butter
  • sliced Thai red chilli or dried chili flakes (optional)
  • chopped parsley (optional)


  • Season the skin side of the chicken thighs with salt and place them, skin side down, in a cold skillet.
  • Turn the heat to medium-high.
  • Cook the chicken pieces for 10 minutes without moving them, until the skin is golden.
  • Flip the chicken.
  • Add the sliced garlic, chicken broth, black pepper and lemon juice to the pan. Reduce the heat to medium and cook for another 7–8 minutes, or until the chicken pieces are cooked through.
  • Add the spring onion and butter to the pan, switching off the heat after 30 seconds. If desired, add the Thai red chilli slices or dried chilli flakes to the pan. Let the butter melt completely into the sauce and stir gently.
  • Top with chopped parsley, if desired, and garnish with lemon wedges on the side. Serve immediately.

Recipe notes:

  • Make sure the pan is cold when you place in the chicken pieces. Make sure you put them skin side down.
  • If you use chicken without skin, you will need to add some oil to the pan.
  • This recipe is best suited for chicken thighs (I have not tried it with chicken breasts).
  • To keep the dish dairy free, you can omit the butter. Try adding some coconut cream to add dairy-free richness to the sauce.
  • For more spice, add a chopped red chilli to the pan at the same time as the spring onion and butter.
  • Serve with a salad, rice, rolls or roasted vegetables.
