William Lau, chef de cuisine of WHISK and Foodie Forks 2024 Rising Star Award winner, has left his post, as announced in a message he shared on Instagram last week.

Joining The Mira’s multi-year Michelin Guide recommended restaurant in September 2022, he commanded a daring presence with crafted menus that played upon depth and strong umami touches. He was particularly fond of Japanese vegetables and gamey meat.

On his Instagram story, William wrote “To all my beloved customers and friends, I will be leaving the restaurant. The 22nd of this month will be the last day I prepare my dishes. After that I will be available for pop-ups, collaborations or catering event (sic). One again, thank you for the support from the team and customers.”

“I am grateful for the work I have delivered at WHISK, which lead me to [winning] the Rising Star Award in the Foodie Forks ceremony in May. I am looking forward to inviting Foodie readers to my upcoming pop-up events before my new establishment,” William told Foodie.

Chef Sheldon Fonseca will taking over at WHISK to continue the great legacy of the restaurant.
