Every year, this month brings with it the gastronomic celebration of the European capital of culinary arts with the Le French GourMay festival. Hotel ICON is marking the month with a very special collaboration rejoicing in the occasion at its renowned Chinese restaurant in the clouds, Above & Beyond.
The six-course wine-pairing menu is East meets West themed, featuring seasonal Cantonese dishes matched expertly with a selection of favourites inspired by premium French wines from the Loire Valley. Priced at $1,288 + 10% per person, this special dinner, available throughout the month of May, is the perfect way to celebrate the one-and-only major festival in Hong Kong dedicated to gastronomy à la française, with a glass of beautiful French wine in hand – santé!

Le French GourMay East-meets-West wine-pairing menu
The meal begins with a decadent Chinese speciality platter of barbecued suckling pig, marinated Japanese cucumber with garlic and jellyfish, along with marinated black fungus and scallops with chilli sauce.
This is flavour-paired with an elegant and fresh Chenin Blanc that rings of apple and citrus, Méthode Blanc Domaine Plou & Fils NV.
Next comes deep-fried crab claw with shrimp mousse and honey citrus sauce complemented by a crisp and aromatic Henri Bourgeois Sancerre La Bourgeois 2015.
The braised asparagus with conpoy and bamboo pith reaches new depths when paired with the rich and complex Henri Bourgeois Pouilly-Fumé La Demoiselle de Bourgeois.
Pan-fried garoupa fillet with balsamic vinegar goes perfectly with the light and pleasant Henri Bourgeois Sancerre Rouge Les Baronnes 2015, along with the always-popular fried rice with conpoy, egg white and minced ginger.
Finish with the indulgent wok-fried Wagyu beef cubes with black pepper, paired with the fruit-forward knockout Olga Raffault Chinon Rouge Les Picasses 2011.
