The Tai Pan – Christmas winter berries and mascarpone cheese sphere
Set amidst the stars is the hotel’s stunning rooftop restaurant and bar, Popinjays. For a truly celebratory Christmas Eve and Christmas Day, tuck into an extravagant six-course Christmas dinner menu ($1,288) featuring European classics with a modern touch such as scallop carpaccio and Aquitaine caviar, foie gras à la ficelle, Irish king langoustine with Perigord black truffles and wild venison.
Or enjoy The Tai Pan’s seasonal artisanal produce, with highlights of Tasmanian ocean trout, Maine lobster consommeé and grilled Prime beef tenderloin. There’s the plush five-course Christmas Eve menu ($1,088), deluxe five-course Christmas Day dinner menu ($988) or bountiful six-course New Year’s Eve gala dinner menu ($1,088). If you prefer to host at home, you can order in The Murray’s free-range California-raised organic turkey for 8–10 people ($1,988), which comes with chestnut-sage stuffing, buttermilk-whipped potatoes, roasted winter vegetables, giblet gravy and spiced cranberry sauce. The boutique bird presents an elegant and hassle-free Christmas dinner option.

Popinjays’ New Year’s Eve party 2019
Popinjays will be hopping with a New Year’s Eve party this year featuring a line-up of live DJ performances, opening with DJ Yukiko and culminating with celebrity DJ Tom Price blowing the roof off, before closing it down to the feel-good beats of DJ Patrice. Your ticket awaits with an entry ticket price of $488, which includes a glass of house bubbly to ring in 2020.
Free-flow packages are also on offer, where bottomless alcohol will flow from 9:30pm–3am. Tickets for free-flow packages are available until 15 December for the early-bird price of $1,488, as well as table packages from $7,888 for a truly opulent evening.

Join the flamboyant festive rooftop afternoon tea at Popinjays ($728/2), available from 1 December 2019–5 January 2020.
Or the Garden Lounge is serving its signature Christmas afternoon tea ($688/2), with sweet and savoury bites and a dessert trolley filled with Christmas treats.
The pet favourite, Paws for Tea ($449/person), will return on 14 and 15 December with customised dog scones and doggy treats for guests’ furry friends, with sittings at 2:30–4:30pm and 4:45–6:45pm.
