Cooling down in this summer heat is taking on a new meaning with the introduction of Fire Well Hotpot’s latest item: a summery watermelon soup base.

Available from today till Sep. 30, the Sai Wan-based hotpot star introduces the watermelon Sir Tang’s soup (HKD268) for the summer months, a hotpot base inspired by Sir Tang Shiu-kin, the grandfather of China Tang’s founder, Sir David Wing-cheung Tang.

Inventing a concoction of fresh watermelon slices and juice, sea conch, fish maw, Jinhua ham, and Fire Well’s secret broth, the soup base is said to deliver natural fruitiness with a savoury flavour and non-greasy finish. 

Guests are recommended to dunk their hotpot ingredients into the soup and sip the savoury watermelon juice post-dunking.
