La Paloma is returning for its Miércoles Calientes on May 20, the latest edition of their Hot Wednesdays series joining buzzy restaurants across Hong Kong with a menu that blends cuisines with an oversized paella central to the night.
Gaylord Indian Restaurant’s chef Sanjeev Rana joins chef Alex Fargas next week for a menu (HKD488 per person) that brings Indian and Spanish flavours together, kicking off with guava pani poori, palak patta chaat, vegetable samosa, and classic butter chicken with truffle cheese naan.
The giant paella show reveals a Malabar seafood curry paella, a south Indian-inspired dish bringing lobster and prawns cooked in a creamy coastal sauce to the paella, with hints of tomato, coconut, curry leaves, and ground spices. Dessert caps off the night with gajar halwa, a slow-cooked grated carrot pudding.
