Sai Ying Pun’s Test Kitchen has become known for its groundbreaking pop-ups, showcasing chefs and cuisines from all over the world. We recently awarded founder and owner Vincent Mui the Foodie Forks 2020 Editors’ Choice Food Hero award for his bold and innovative approach to dining.

In light of COVID-19, Test Kitchen was unable to host its usual array of international culinary talents and instead shifted its focus to local chefs, hosting private dinners and even a weekly Finnish pastry pop-up with Chef Eric Räty of Arbor. Now, Test Kitchen is back with two proper dinner pop-ups this July!

The Bombay East Indian Girl

Chef Samaira Rubina Coutinho Kavatkar

Chef Samaira Rubina Coutinho Kavatkar presents a two-night pop-up of refined East Indian dishes combining Indo-Portuguese flavours. Chef Kavatkar will draw on her childhood memories of Mumbai and Mauritius and her extensive travels in a menu full of spice and homemade touches. Expect dishes like beetroot puri and East Indian fish kujit in banana leaf, all using the freshest of seasonal produce from both India and Hong Kong.
Chef Rubina is a corporate professional by day with a passion for cooking, aiming to write her own cookbook that changes the perceptions of Indian food around the world.

Chef Peter Lee began his culinary journey amongst the fishmongers and dried seafood stalls of Ap Lei Chau. At age 30, his obsession and passion for these ingredients led him down a new path, when he started working at Michelin-starred restaurant Bo Innovation. He then went on to culinary school in the UK before working his way through restaurants in Sydney and Hong Kong. Through this pop-up, chef Peter wishes to evoke Hong Kong’s cha chaan tengs, his grandmother’s cooking and the sights and smells of Ap Lei Chau, with dishes like Scallop Fever (seared scallop, razor clam, Sichuan hollandaise espuma) and Flinstones (bone-in short ribs with spicy chu hao sauce and braised daikon beef consommé).
