Jǐng has unveiled its latest menu exploring the Manchurian and Han flavours of China’s former Qing Dynasty, including a brave menu of imperial recipes adapted for today’s palates.
The Man Han 108 menu (HKD1,399 pp) is comprised of 10 main courses and eight small dishes presented within the restaurant’s surround-sound and visual sensory room, drawing connections between sight, sound, and taste.
Within the menu, the Yunnan “Monkey Brain” travels back hundreds of years to revive an Eight Treasures delicacy. The imitation dish creates a monkey brain using silken tofu to emulate the consistency of the primate’s noggin, paired with Yunnan rice noodles and Zhaotong chilli sauce to raise the heat.
Whilst it might be hard to find real monkey brain in the city to nosh on, this could be the closest thing.
