La Paloma is returning with its Miércoles Calientes on May 20, the latest edition of its Hot Wednesdays series joining buzzy restaurants across Hong Kong with a menu that blends cuisines with an oversized paella central to the night.
Gaylord Indian Restaurant chef Sanjeev Rana joins La Paloma chef Alex Fargas next week for a menu (HKD488 pp) that brings together Indian and Spanish flavours, kicking off with the guava pani puri, palak patta chaat, vegetable samosa, classic butter chicken, and truffle cheese naan.
The giant paella show reveals the Malabar seafood curry paella, a dish inspired by the flavours of South India, bringing lobster and prawn cooked in a creamy coastal sauce to the paella, along with hints of tomato, coconut, curry leaf, and ground spices.
Dessert caps off the night with the gajar halwa, a slow-cooked grated carrot pudding.
