The grand dame of Hong Kong hotels has recently welcomed Executive Chinese Chef Wing-Keung Wong to its Michelin-starred restaurant Man Wah. With over 30 years of experience, Chef Wong is quite familiar with the kitchens of the Mandarin Oriental, having sous-cheffed there seven years ago before moving to Yee Tung Heen at The Excelsior, where he helped the restaurant to earn a coveted Michelin star.

In what can be seen as a homecoming, Chef Wong brings his signature dishes to the plush setting of Man Wah, including unique favourites such as deep-fried sea urchin pudding, wok-fried lobster with scrambled egg and braised chicken with abalone. This changing of the guard at the Mandarin brings a fresh take to a Hong Kong icon.
