Rhoda from @platesandbubbles recently made a delicious arroz Cubano, or arroz a la Cubana, for breakfast last weekend. Spanish-speaking countries tend to have their own variations of this rice and fried egg dish. In the Philippines, it’s cooked with minced beef. Ingredients:
- 300g organic beef rump mince
- 2 cups cooked rice
- 2 shallots, chopped roughly
- 2 cloves garlic, minced
- 1 cup diced potato
- 1 cup diced carrot
- ½ cup frozen peas
- 250g chopped tomatoes
- 1 tbsp tomato paste
- ¼ cup dried cranberries
- 1–2 plantains
- 1 egg per person
- salt, to taste
- pepper, taste
- olive oil
- cayenne pepper (optional)
Method:
- On medium heat, sauté the shallots, garlic, potato, carrots and peas until they soften. Season with salt to taste.
- Add the minced beef and cook until the meat browns.
- Add the chopped tomatoes, tomato paste, cranberries, salt, pepper and cayenne, if using, and cook until the tomato sauce is absorbed by the beef. Set aside.
- In a separate pan, slice the plantains and fry on both sides. Set aside, then fry the eggs, sunny side up.
- Assemble all elements with the steamed rice.
