Alain Ducasse has built an culinary empire spanning the globe, and his Michelin-starred Rech in Hong Kong is now playing host to a series of guest chef appearances from the chef’s acclaimed restaurants around the world.
First to showcase his skills is guest chef Frédéric Garnier from Chef Ducasse’s one-Michelin-starred La Bastide de Moustiers in Alpes-de-Haute-Provence. Chef Garnier has worked with Chef Ducasse for over 20 years at various restaurants including Le Louis XV in Monaco, Alain Ducasse at The Dorchester in London and Alain Ducasse au Plaza Athénée in Paris.
From now until 8 November 2018, Chef Garnier takes over Rech’s kitchen with five- and six-course dinner menus ($1,188/$1,588) showcasing the bounties of the Mediterranean. Wine pairings ($688/$888) are also
available.

Seared scallops with butternut squash and hazelnut seaweed purée
Prawn over spelt from Alpes-de-Haute-Provence with green avocado aioli
Fillet of turbot over oyster and rye, served with beetroot
Bacon-flavoured goat’s cheese
Confit of apple and quince with olive oil vinaigrette and apple and hay ice cream
