The launch of Harbourside’s Gastronomic Mapping series sees guest chef Huan Tran, executive sous-chef at Regent Phu Quoc, making himself at home at Regent Hong Kong for the next three months, from Apr. 29 till Jul. 31.

Taking centre stage at Harbourside’s slap-up weekday lunch buffet (HKD528/adult; HKD418/child aged 4–11), chef Huan will be showcasing the diverse flavours of Vietnam, including recipes from the stunning island of Phu Quoc, where he now resides. 

The dishes curated by chef Huan, several of which are not commonly served in Hong Kong, will be offered on a rotational basis throughout his three-month residency. From Phu Quoc, there’s bún quậy, a fragrant seafood-based rice-noodle soup. Northern Vietnam brings to the buffet table bún chả Hanoi, grilled pork meatballs in a cold broth with plenty of fresh greens.

Moving to central Vietnam, the iconic Vietnamese sandwich known as the bánh mì makes a special appearance, this time with roasted pork belly and grilled chicken added to the mix. Gỏi cuốn tôm thịt, or fresh spring rolls, feature from southern Vietnam.

Wash down your bottomless Vietnamese bites with Viet-style drinks the likes of Vietnamese iced coffee, coconut coffee, and sugar-cane juice.
