Ambrose Chiang, a key member of Hong Kong’s hospitality scene before his departure to New York, has been diagnosed with stage 4 colon cancer, the consultant shared in a post on Instagram on May 24.

The Australian-born Hong Konger founded Project Ambrose Consultancy in 2019, aiding the growth and development of Hong Kong’s top fine-casual and fine-dining restaurants.

In his Instagram announcement on his diagnosis, Ambrose shares, “Walked into the ER thinking a constant sharp pain might have derived from stress, overeating, eating too fast, gluten, or dairy. Came out of here shocked and speechless as a colon cancer patient. Here a thank you shout-out to the incredible team of doctors and nurses who took great care of me in the past few nights. Thank you so so much for your work.”

A GoFundMe fundraiser has been set up by Ellia Park and Saori Minakawa of NA:EUN Hospitality to support the costs of Ambrose’s hospitalisation, chemotherapy, surgery, and radiation therapy. 

NA:EUN Hospitality is a New York City-based restaurant group focused on Korean fine-dining. Ambrose joined as a general manager of the group in April 2024. The fundraiser has exceeded its goal of USD130,000 for the first eight weeks of care for Ambrose.
